Black Bean & Corn Salsa

I made this for the football party. It took me about 10 minutes to make and was a huge hit!

Black Bean & Corn Salsa

1 can black beans (drained and rinsed)
1 can corn (drained)
4 large tomatoes (cut into big chunks)
3-4 garlic cloves

1 red onion, (diced small)

2 avocados, (cut into small chunks)
2 tablespoons chopped fresh cilantro

1 teaspoon cayenne pepper

2 teaspoons cumin

1 teaspoon chili powder

1 teaspoon sugar
1 lime, juiced

1/2 lemon, juiced

salt and pepper to taste

Pulse tomato chunks and garlic in a food processor until tomatoes are slightly crushed. Then mix all ingredients together in a bowl. Refrigerate for about 30 minutes to let flavors flourish. Serve with tortilla chips. You can use 1 can of chopped tomatoes if you do not have fresh tomatoes, just make sure to drain them before pulsing in food processor. If you like spicy salsa, add 1 jalapeno to the tomatoes and garlic and pulse together before mixing with the other ingredients.

It's Football Season!

So the Buckeyes are playing tonight and being here in Omaha makes me miss Ohio State football even more...so my husband suggested we have a football party tonight to cheer on the Bucks as they play #1 USC. It's tough being a Buckeye here in Nebraska as they love and adore their own Huskers but we got a few people to come over and I've been working on the snacks for the last few hours and they're all done and look so good. I'm a firm believer that you don't just have to have store bought salsa and dip because you're having a football party. I made some really good football party food and will post the recipes and pics tomorrow. For now, I must go chill the beer, make some cocktails and put on my OSU gear. GO BUCKS!
